Rib chops come from the rib section of the loin from the shoulder back to the middle.  The bone along the side is actualy a baby-back rib and they have a large eye of loin meat.  These chops are full of flavor!  Our chops have the potential to be the best pork you have ever eaten.  Please treat them right.  After thawing, place in a saltwater brine for at least an hour.  Rinse and season to your taste.  Cook them quickly over high heat being careful not to overcook, grill, sear, or broil.  Sit back and take credit for the best pork your family has ever eaten.
