Loin chops (AKA--Porterhouse Chop) come from the center of the hog back and normally have a T-shaped bone with loin on one side and tenderloin on the other.  Our chops have the potential to be the best pork you have ever eaten.  Please treat them right.  After thawing, place in a saltwater brine for at least an hour.  Rinse and season to your taste.  Cook them quickly over high heat being careful not to overcook...grill, sear, or broil.  Sit back and take credit for the best pork your family has ever eaten.
